Food trends on show

The 2011 edition of Cibus Tec (October 18th-21st), the international food industry technology and solutions show, registered in Parma an increase of exhibitors (7%) and of visitors (10%).

The technology was the real star of the show, confirming the propensity towards innovation of Italian food machinery sector, as highlighted by a study made by Istat: 43% of companies in the segment invest in R&D, tripling exports compared to the not-so innovative companies.

A host of novelties featured on the process and packaging front: from the rotating autoclave for sterilizing products that halves the processing time to the multipurpose high-energy-saving evaporator; from the steam peeler that removes the skin of fruit&vegetables to the peach stone pitter that does not require the human labour; from the first aseptic cardboard milk bottle to the aseptic packaging systems that totally eliminates sterilising substance residue; extra white flour and the new continuous, high-pressure systems.

But also the first "pro-climate" label designed by LegAmbiente for a famous tomato puree brand that measures the low CO2 emissions recorded in the entire production process.
On the market trend front, it’s worth pointing out the preference of continental and East Europeans for “ready meals” (preparations of chicken, soups, pizza and pie dough bases, fresh juices); the boom of convenience produce and the increased consumption of innovative vegetable-based juices.
Lastly, the talks and conventions, including the World Milk Congress "Summilk", which attracted 1500 worldwide dairy operators to Parma.
Fiere di Parma SpA confirmed as of this year the triennial frequency of Cibus Tec, which will be back in 2014.
